Mango Salsa Salmon

Mango Salsa Salmon on a bed of sautéed greens is the perfect meal for this weekend! This is a super quick, easy, fresh, and healthy meal, that really celebrates the warmer weather.

Serves 2.

Ingredients:

  • 16 oz Wild Salmon

  • 5 oz Spinach or other greens

  • 1 clove garlic

  • 2 oz Avocado Oil 

  • 1 Mango, cubed

  • 1/4 cup of Red Onion, diced

  • 2 Tbs Cilantro, finely chopped

  • 1 Jalapeño, diced

  • 1 Whole Lime, juiced

  • Salt & Pepper to taste

Directions:

  1. Heat oil and garlic in pan over medium heat. 

  2. Add Salmon to hot pan, reduce heat, and cover. Add salt to taste.

  3. Combine mango, red onion, jalapeño, cilantro, and lime juice in bowl.

  4. Flip salmon filets after about 4 minutes, cook on second side until salmon is firm, about 3-4 minutes.

  5. Remove salmon from pan, add spinach to pan with the oil and garlic from salmon. Cook until it becomes dark green. 

  6. Plate, serve, and enjoy.
