Asian Salad with Sesame Ginger Dressing

We don’t know about you but as the weather gets warmer we crave fresh tasting, cool, light food. That’s why we are loving this Asian salad with sesame ginger dressing. It’s packed full of vegetables, is extremely refreshing, and makes us feel energized after eating it. It provides a lot of nutrition and will not add too many calories to your day. Plus, the crunch of the nuts makes it really satisfying. It is paleo, gluten free, & vegan as listed. This is a great stand alone dish on it’s own but is even better when paired with tofu, salmon or chicken breast.

Ingredients:

For Salad:

  • 2 carrots, grated (or 1 cup pre-grated)

  • 1 red pepper, finely diced

  • 2 celery stalks, finely diced

  • 1/4 medium red onion, finely diced

  • 1/4 cup of parsley or cilantro

  • 2 tablespoon toasted sesame seeds

  • 1/4 cup of roasted nuts of your choice (we like cashews)

For Dressing:

  • 2 tablespoons sesame oil

  • 1 tablespoon fresh squeezed lemon juice (about 1/2 a fresh lemon)

  • 1 table spoon honey or maple syrup

  • 2 tablespoon soy sauce or coconut aminos

  • 1 teaspoon of freshly grated finger

  • 1 small clove of freshly grated garlic

  • Sea salt & pepper to taste

Directions:

  1. Combine all dressing ingredients together in small bowl.

  2. Whisk together until completely combined.

  3. Combine all salad ingredients in medium to large size bowl and toss with dressing.

  4. Pair with protein of choice.

  5. Enjoy.
